APPLE COMPOTATION CAKE


The weekend is coming and I leave you a delicious cake. We are in the apple season and although this year the harvest was not very abundant to make the odd dessert there is. The cake has no complexity and more if you buy the dough, mine is homemade and you have the recipe here in case you are interested, otherwise very simple and for those who love pies and apple desserts like I have a perfect one in front of me. ..
INGREDIENTS:
  • 2 discs of chilled refrigerated dough (mine homemade)
  • 6 medium apples
  • 15 gr of cornstarch
  • 30 gr flour
  • Grated 1 lemon
  • 1/2 lemon juice
  • 1 teaspoon cinnamon
  • 150 gr of brown sugar
  • 3 cookies
  • 25 g of butter
  • 30 ml of milk
PREPARATION:
Peel the apples and cut the diced pulp, removing the heart. Mix the cornstarch with cinnamon. We add this mixture to the apples, with the sugar, the grated rind and the lemon juice. We reserve 20 minutes in the fridge.
We preheat the oven to 180º.
Stretch the dough discs with the rolling pin, on a floured surface until it is about 5 mm thick, if we make the homemade dough, we follow the same procedure. We lined a removable mold and pricked it with a fork. We crush the cookies and sprinkle the base with them. We distribute the stuffing on top of the cookies, distributing it well throughout the base.

Divide the 25 grams of butter over the filling. Moisten the edges of the dough with a little water and cover with the other disc. Press a little so that the edges are well sealed and make a few cuts on top, so that the steam comes out during cooking.
We brush the surface of the dough with the milk. We put halfway up in the oven and bake 1 hour or so. We remove it from the oven, let it temper on a grid.
